These banana oat muffins are so fluffy and moist. They’re easy to make with basic ingredients and only need one mixing bowl! Feel free to add mix-ins of your choice, like chocolate chips or blueberries.
Olive oil: 1/3 cup
Honey: 1/2 cup
Egg: 2
Milk or water: 1/4 cup
Mashed ripe banana: 3
Baking soda: 1 teaspoon(tsp)
Vanilla extract: 1 teaspoon(tsp)
Salt: 1/2 teaspoon(tsp)
Cinnamon: 1/2 teaspoon(tsp)
Whole wheat flour: 1 and 3/4 cup
Oat: 1/3 cup
Preheat oven to 350°F(180°C)
In a large bowl, mix all ingredients. (You can add fresh blueberries or chocolate chips as well)
Pull the muffin mixture into the muffin cups or muffin tray, filling each cup about 4/5 full.
Bake about 23 minutes or until a toothpick inserted into a muffin comes out clean.
Cool down for about 10 minutes. Enjoy!
